The MISMA LANI Difference
As Big Islanders, we love when visitors take home a small piece of our coffee community to share with their family and friends. It’s part of the Aloha spirit, after all.
What you won’t find amongst our products? Mass-produced, mass-roasted, or lower-grade coffee beans. We want our customers to experience the best that Kona has to offer and that starts at the farm.
“When you purchase our coffee, you will receive only the highest grades of 100% Kona coffee, carefully processed and roasted to order.”
Farmers & Coffee Processing Experts
We not only farm and process our own coffee, our team is also hired year after year by other coffee farmers throughout Kona to handle their processing. We are incredibly proud of our farming and processing and know you’ll be able to taste the Misma Lani difference.
Our coffee begins, of course, with our farming - the coffee fruit growing in our orchard. The fruit (and the coffee beans inside) is processed and dried on our farm and sorted to ensure we are only selling the highest grades of Kona Coffee.
Roasting is the last step, and we work with the best local roasters on our island (seriously, read about them here!). They roast all of our coffee weekly, to order, so that when it gets to you it is still super fresh. And with coffee, like bread or fruit, freshness makes all the difference!
PROCESSING
We use three main process methods for our coffee: washed process (also known as “pulped”), honey processed (also known as semi-processed), and natural processed (also known as dry processed). For those who may be newer to the specialty coffee community, “process method” refers to the process that we as farmers use to wash, peel, and dry the coffee fruit after it has been picked and before it is roasted. To learn more, this article from the Barista Institute is a great in-depth explainer on coffee processing methods!
Our washed processed coffee is our light roast, med/dark roast and our peaberry. It is the coffee most people are familiar with and has the caramelly/smooth flavor profile that Kona coffee is known for.
Our honey processed coffee has a similar flavor profile to our washed but with an extra sweetness that comes from the coffee fruit pulp drying on the bean. It is great for anyone who likes subtly sweeter and fruiter coffees without the super fruit-forward profile of a natural process.
Our natural processed coffee is a full-bodied and fruit-forward cup. It is super unique - not many farms in the world offer a natural process and is relatively rare in Kona as well because of the additional labor required to produce it. Our natural will give you an insight into the terroir of our coffee and the fruit flavor profile of our varietals in a way that our other offerings do not.
Unsure which process method is right for you?
“At Misma Lani we are experts in coffee FARMING but coffee ROASTING is its own art form that makes or breaks even the best green coffees.”
ROASTING
Coffee roasting is like bread baking in that a great baker can transform even the most basic raw materials (flour, water, yeast) into a loaf of bread that is far more than the sum of its parts. And what’s more, they can create many different styles and flavor profiles out of those same basic raw materials.
Also like baking, coffee roasting has a relatively low barrier of entry - lots of people can roast coffee. But great coffee roasting is much harder to achieve and a great coffee roaster is truly an artist who transforms a humble raw material (green coffee) into your final coffee drinking experience. As farmers, we rely on our roasters to emphasize everything that makes our coffee special in the flavor profile that our customers will experience.
We’ve teamed up with Pacific Coffee Research
We are so proud to have Pacific Coffee Research as our roasters.
Like Misma Lani, Pacific Coffee Research is a women-owned & operated coffee company based right here in Kona. The core of their values and mission is the creation of great coffee at every level through the education of our entire coffee community - farmers, processors, roasters, and baristas. Their goal in all of their services is to build a stronger and more resilient Hawaii coffee industry.
It is for all of these reasons that we are thrilled to have PCR as our partner to handle all of our professional roasting as well as our quality analysis. In fact, it’s PCR that created each of our unique roast profiles! The profiles they’ve created highlight the inherent qualities of each of our coffees while also being incredibly tasty. You’re going to love them!
