Honey process is a processing method where the natural sugars or “mucilage” are not washed off before laying out to dry. The fermentation process continues through the drying process allowing for unique flavors to pop out! Honey processes are rich in body and flavor but require meticulous handling when drying. This method also uses 80% less water than the washed method.

The flavor profile of our honey process is great for anyone who likes subtly sweeter and fruiter coffees without the super fruit-forward profile of a natural process.
